Illimis Cinsault was made from grapes sourced from a Darling vineyard planted in the 1970's close to the coast, fermented partly with carbonic maceration and aged in a combination of 225-litre and 500-litre 4th-fill barrels for 6 months. 2,075 bottles were produced. Bottled at 12%. (Bottle size 750ml)
Nose: Delicate floral notes, almost like sweet perfume, hints of fruits such as strawberry and raspberry.
Palate: Bright red fruit notes on entry, strawberry raspberry and cherries, light tannin structure with good acidity.
Finish: Smooth with a lingering subtle salty finish.
